Observation: There are ready-to-eat celery stored under shelled eggs and ground beef in the 2-door reach-in cooler in the kitchen.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

Observation: Cut lettuce in the top area of the prep cooler on the line is cold held at 46°F. Lettuce observed being held abov the load zone of the cooler. Lettuce was placed inside the cooler during the inspection to ensure proper tempertaures.
Correction: Maintain cold potentially hazardous foods at or below 41°F

Observation: Shelled eggs at the cook line measured 62°F due to being out of teperature control for extended amount of time. Keep eggs in the cooler and only take out supply of eggs needed for orders.

Observation: Clean and sanitize the can opener and slicer.
Correction: Maintain food contact surfaces in a clean condition.
