    Observation: Food contact surface of bulk flour bins and vegetable bins in the walkin are not food grade plastic.
    Correction: Replace all plastic containers with food grade bins. Bulk flour can be left within the bag and then the bin but can not be stored in the bin directly.
  • FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE
    Observation: Digital thermometer is not working for monitoring temperatures in thin mass foods.
    Correction: Replace battery or obtain a new digital thermometer capable of taking temperatures in thin mass food items.
  • EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED (repeated violation)
    Observation: Shelving in the walkin cooler is lined with cardboard. Wooden shelves in kitchen are lined with cardboard and duct tape. This does not allow proper air circulation in walkin cooler and does not provide an non-absorbent, easily cleanable surface.
    Correction: Remove the cardboard and duct tape, clean shelves and repaint if necessary to provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
  • WAREWASHING - SINKS - USE LIMITATION (corrected on site)
    Observation: The warewashing sink is being used improperly for sanitizing. Sanitizing is the last step.
    Correction: The proper use of the warewash sinks is WASH, RINSE, then SANITIZE.

    Observation: Unused equipment and other items are located outside by the back door.
    Correction: Items that are unnecessary to the operation of the food establishment shall be removed from the premise.

    Correction: Obtain a scoop or other utensil with a handle and store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.

    Observation: New shelving had duct tape and cardboard.
    Correction: Seal, paint or varnish bare wood surfaces to provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
