Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Gyros stored on the bottom cooler drawer were stored at 47°F. Items stored on the cookline cooler well were holding at 45F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Gyros portion was discarded. It is my recommendation that items stored in the cookline cooler well should use time as a public health control. Management agreed and will discard all at 3 PM.
USING A HANDWASHING SINK - ACCESSIBLE Observation: Handwashing sink was not operational and is unavailable for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Hands free control module broke on 8/11/15 and new part is on order and should be repaired by 8/15/15.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Cookline freezer door handle is broken.
