Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Training provided to make a bucket with Quat Sanitizer from the 3 compartment sink. A sanitizer bucket was made during my inspection.
PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR Observation: The Grease trap entry pipe has a leak. Note: A catch bucket is in use to capture the leak. The waste water is being discarded in the mop sink.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.
