EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Cooler door gaskets on 2 door true cooler are torn - not maintained in good repair. Hinged cover door to top of prep cooler is not provided to cover food trays at top of cooler. Operator is having custom made door made to fit this cooler. Temporarily, an NSF large wedged plastic cutting board will be used to cover all exposed plastic food trays and hold cooler temperatures to 41 degrees fahrenheit or lower. Cover to this cooler will be provided within 30 days.
