- Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS
Observation: Raw hamburger was being thawed on a tray above cooked sliced pork and smoked ham.
Correction: Always store raw meats below any cooked meats, vegetables or other ready-to-eat foods.
- Critical: RTE/PHF-TCS PROPER DATE MARKING
Observation: Most food items have a date marked on them but there were some foods that did not have proper date marking. (partial smoked ham, etc.)
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- WAREWASHING - CHEMICAL SANITIZER CONCENTRATION
Observation: I noted the dishwasher drying utensils and trays witha dirty cloth towel.
Correction: .All uensils, trays, etc. must be washed, rinsed, sanitized and be allowed to air dry. Do not dry with cloth towels.
- FOOD CONTACT SURFACES - SOILED
Observation: Work table in corner of kitchen is dirty. Also walls near table.
Correction: Clean the work table and the walls in the corner of the kitchen.
- WIPING CLOTHS - USE LIMITATION - SANITIZING SOLUTIONS
Observation: Wiping cloths were not stored in sanitizing solution between uses. Also the wipings cloths that I observed in the kitchen were extremely stained and soiled.
Correction: Store wiping cloths in a bucket with 200ppm chlorine (bleach/water) solution. Additionally, DISCARD all of the stained, dirty wiping cloths in the kitchen. Provide new clean wiping cloths.
- FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
Observation: Plastic container (without handles) are being used for dispensing bulk foods (flour, breading).
Correction: Do not use plastic containers that do not have handles for dispensing foods. Provide scoops that have a handle. Store scoops in the food with the handles sticking up and out of the bulk food. (do not lay scoops inside bulk container so the handle is in direct contact with the food item).
- THAWING
Observation: I noted the following items being thawed at room temperature: raw hamburger, chicken, sliced pork, smoked ham, and roasts.
Correction: Do not thaw foods at room temperature. Thaw foods in walk-in cooler, under running water, in a microwave or as part of the cooking process.
