Observation: Several wiping cloths used for wiping counters stored on food prep surfaces in front tier of restaurant.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Correct By: 12-Sep-2015

Observation: The tile flooring throughout food prep and dishwashing areas are grease laden and very slippery.

Observation: There are pre-cooked flame roasted chicken breasts stored under a tub of raw fish in the walk-in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. During inspection, the walk-in cooler was reorganized.
- TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINANCE - COMMON NAME-WORKING CONTAINER
Observation: There is a spray bottle of window cleaner and two spray bottles next to the shake mixer that are not labeled with the common name of the substance.
Correction: Label working containers with the common name. Correct By: 14-Mar-2014
- THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT
Observation: There is no thermometer in the Kairak 1 door reach-in meat cooler/well.
Correction: Maintain thermometers in all refrigeration units and locate them in the warmest part of the refrigeration unit. Correct By: 26-Mar-2014
