    Observation: Soup in hot holding unit and corn in steam table were observed hot held at and 120.4 and 112.1°F.
    Correction: Maintain hot potentially hazardous foods at or above 135°F. Soup was discarded during the inspection. Heat for corn was turned up during the inspection and a lid was put on to cover the open part of the steam table to help keep heat in.
  • Critical: PHF/TCS, COLD HOLDING (corrected on site) (repeated violation)
    Observation: Sliced tomatoes in the top of the 4 drawer cooler were observed cold held at 48.3°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Lid was closed on the unit during the inspection. Temperature observed at 43.2.
  • Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site)
    Observation: Lasanga in the walk-in freezer and mashed potatoes, corn and other items in the walk-in cooler were observed missing date marks.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Date marks were added to the food items during the inspection.
  • Critical: SEWAGE - BACKFLOW PREVENTION
    Observation: A connection exists between the sewage system and a food prep sink drain, as well as the upstairs ice machine, and there is only one backflow prevention device on the mop sink.
    Correction: Design the systems in a manner that would preclude a connection between the sewage system and the drains and hose. Remove the connection with proper air gaps (ice machine, food prep sink) and a backflow prevention device (mop sink). Correct By: 13-Nov-2015

    Observation: A food product was observed subject to potential contamination by being contained in a very dented can along the seam.

    Observation: There is a Whirlpool reach in cooler and freezer combination unit being used in the kitchen area that is not ANSI certified or approved by the department. The unit is stated for household use and should not contain any potentially hazardous foods.

    Observation: Non-food contact surfaces of kitchen equipment and floors and the dry goods area floor under the food storage racks were observed soiled with debris, food particles, oil, and dust. The door handle to the kitchen True 1 door reach in freezer is covered with duct tape that is peeling.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment and floors. Correct By: 13-Nov-2015

    Observation: Pie servers were observed stored behind the waitress handwashing sink and drink dump sink is improperly stored in the front kitchen area.

    Observation: Soda gun at upstairs bar is in need of cleaning.
    Correction: Clean soda gun and maintain in a sanitary condition.
