Critical: COMPLIANCE WITH FOOD LAW - PRIVATE HOME (corrected on site) Observation: Pasta salad and other food items in Frigidaire refrigerator are prepared in a private home.
Correction: Remove foods from Frigidaire refrigerator which are not for public consumption. Cross-contamination may occur from storage of food prepared in a private home with food intended for public consumption.
EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS Observation: Frigidaire refrigerator is not ANSI certified or approved by the department.

WAREWASHING - SINK COMPARTMENT REQUIREMENTS - TWO COMPARTMENT USE Observation: Two compartment sink is improperly used. Operator does not have an approved detergent-sanitizer for proper use.
Correction: A two compartment sink's use shall be approved by the department, only used for batch cleaning operations, made up immediately before use and drained afterward, and uses a detergent sanitizer in both compartments or a hot water sanitization immersion step. Recommended operator use a receptacle such as a bus tub that substitutes for the sanitizing compartment of a three compartment sink so that regular bleach diluted to 100 ppm may continue to be used as an approved sanitizer. Observed "simple" permit category items include baked goods such as sliced bread, muffins, and bagels that are purchased in bulk and individually wrapped by the operator. Bulk cereal dispensers are also provided.
Correction: Reduce current operation to meet current license restrictions or modify your current license and pay applicable fees to the department. All food code requirements for the new risk category shall be met before moving from one category to another.
