Observation: Noted during inspection that the new CFM certificate along with the current Food License is not posted in the establishment in public view.
Correction: Provide & post an original State of Wisconsin food manager's certificate.

Observation: Non-food contact surfaces of basement walk-in cooler noted with mold on the ceiling and a lot of ice build up. Defrost cooler and clean out mold.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

Observation: Kitchen cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.

Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
