WAREWASHING MACHINES - OPERATING INSTRUCTIONS Observation: The warewashing machine is not operated according to manufacturers directions.
Correction: Operate the warewashing machine consistent with the machine’s data plate and other manufacturer’s instructions. Service called at inspection.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Non-food contact surfaces such the microwave area, shelving unit across from the grill/cook line/ dishwash dispenser/equipment have food spill build-up.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
KITCHENWARE AND TABLEWARE - HANDLED TO PREVENT CONTAMINATION Observation: Unwrapped straws and Styrofoam cups at self-serve bar/coffee/drink station are not protected from handling.
Correction: Provide wrapped items or a dispenser for the self-serve cups and straws.
CLEANING, FREQUENCY AND RESTRICTIONS Observation: The walls and floors are due for cleaning. Season end cleaning is in process.
Correction: Finish cleaning. Clean the physical facilities at a frequency necessary to keep them clean.

Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: There are ready-to-eat stored under packages of raw meat in prep cooler. Meat was moved to the lowest shelf at inspection.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
PERSON IN CHARGE - DUTIES Observation: Review safe food handling procedures with all food employees.
Correction: The person in charge shall provide training to employees on food handling related to thawing, designated sink use and raw meat storage.
POSTING OF CERTIFICATE Observation: There is no State of Wisconsin food manager’s certificate posted in the food establishment.
Per Sarah, the certificate verifying WITC verification was sent in to DHS mid-April.
Correction: Provide & post an original State of Wisconsin food manager's certificate.
