Correction: Convey all sewage in the establishment through an approved sewage system maintained and operated according to law. Properly plumb this condensate water outside the walk-in to the sewer of sump pit.
FOOD TEMPERATURE MEASURING DEVICES - PROVIDED Observation: No thermometer is present for monitoring temperatures in foods. An infared thermometer is available but is not able to measure internal temperatures as would be needed for cooking or cooling.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.
WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: No sanitizer is used for wiping cloth used for wiping counters.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution such as 100 ppm chlorine.

Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: Ready-to-eat foods such as butter and soup were found stored under raw meats, chicken and fish.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site) Observation: No chlorine was detected in then dish washer final rinse. No product was dispensed at the appropriate time.
Correction: Monitor the final rinse daily to ensure there is at least 50 ppm chlorine. The chlorine level was okay after fresh sanitizer was primed through the line.
WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A chlorine test kit is not available for checking sanitizer concentrations in the dishwasher. A test paper for Quaternary amonia is available.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
LIGHT BULBS - PROTECTIVE SHIELDING Observation: Compact florescent bulbs are used to light the Migali cooler and the walk-in cooler.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
