Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing. Strongly encourage you to install a papertowel dispenser rather than placing a roll of papertowels at sink area.
WIPING CLOTHS - USE LIMITATION - SANITIZING SOLUTIONS Observation: Wiping cloth solution is too strong. Sanitzer strength test at >1000 ppm
Correction: Maintain wiping cloth sanitizer solution clean and at proper concentration. Suggest developing a procedure to MEASURE and TEST sanitizer each time solution is made.
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: Can goods and various other supplies on the floor in basement (recent delivery???) please put supplies away.
Correction: Store all food items 6 inches above the floor.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Food debris on walk-in floor. Please pick up / clean floor.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

Correction: Maintain cold potentially hazardous foods at or below 41°F
Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Lettuce and tomatoes in walk-in cooler are not marked with a date. Once tomatoes/lettuce are cut, they are considered a potentially hazardous food and must be date-marked with a 7 day "use by" date (or date they were cut...and used within 7 days).
Correction: Date mark tomatoes and lettuce properly.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Floor of walk-in freezer in basement has food debris (chocolate chunks) on it.
Correction: Clean the floor of the walk-in freezer.
