    Observation: Ice making water in the ice machine is coming into contact with moldy surfaces in the ice machine and the ice bin.
    Correction: Empty, disassemble, clean, and sanitize the ice machine. The ice machine must be maintained free of mold. Correct By: 04-Mar-2015
  • Critical: FOOD CONTACT WITH EQUIPMENT AND UTENSILS
    Observation: Soda beverages are coming into contact with mold on the nozzles of the soda guns.
    Correction: Wash, rinse, and sanitize the soda gun and nozzle often enough to it free of mold and yeast accumulations. Correct By: 04-Mar-2015
  • Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site)
    Observation: The dishwashing machine was not sanitizing the food equipment and utensils. It was noted that the chlorine sanitizer product was completely empty at the time of the inspection.
    Correction: The operator must monitor the performance of the dishwashing machine (water temperature sanitizer concentration, stocked chemicals) to ensure proper sanitizing. 50 ppm chlorine is the required concentration for this dishwasher. The operator provided a new jug of sanitizer, primed the line, and checked the solution at this inspection. 50 ppm was found on leaving this inspection.
  • HANDWASHING CLEANSER AVAILABILITY
    Observation: Soap, single service towels, and a handwash reminder sign are missing at the two bar handwashing sinks.
    Correction: Provide these items at a handwashing station at each bar. (A handwashing reminder sign is attached to the comments section of this report) Correct By: 11-Mar-2015
  • PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
    Observation: The drains on the bar ice bins, and the ice machine bin have slime forming on the end of the pipe that could cause a clog and allow dirty water to back up into the ice bin.
    Correction: Clean out the drain terminations on the ice bins. Correct By: 10-Mar-2015
  • LIGHT BULBS - PROTECTIVE SHIELDING
    Observation: Lights in the room where the ice machine is located are not shielded.
    Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs. Correct By: 17-Mar-2015

    Observation: Ice scoop was improperly stored in the ice.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
  • EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
    Observation: Homestyle refrigerator is not ANSI certified or NSF certified or approved by the department for use with Potentially Hazardous foods. Only store non PHFoods in this unit until a new commercial grade unit can be gotten
    Correction: Unapproved equipment shall be removed from food service.
