    Observation: Yogurt mix was found at 54F in the left side of the soft serve hopper.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. (The operator stated that refrigeration technicians were there yesterday to fix the machine. The operator stated they would call again for service. The yogurt was discarded at the time of this inspection and the operator stated that this side of the hopper would not be used until the machine was fixed and operating at 41F or lower.)   • WAREWASHING - CHEMICAL SANITIZER CONCENTRATION
    Observation: No test kit is available for monitoring sanitizer concentration.
    Correction: Provide a test kit to allow accurate determination of the sanitization concentration.
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
    Observation: Wiping cloths were stored in a sanitizing solution that exceeds 200 ppm chlorine.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution that is 100 ppm (about 1 capful of bleach per gallon of water) Correct By: 22-Aug-2014
