**CDC Risk Factor Violation 08 A** : 5-203.11 Handsink.C
• Noted food prep being done in basement with no handwash sink present. Until designated handwash sink is installed no food prep is to be
done in basement. Also, be sure upstairs food prep sink is used for any necessary produce washing / thawing.
(A) Except as specified in ¶¶ (B) and (C), at least 1 handsink, a number of handsinks necessary
for their convenient use by FOOD EMPLOYEES in areas specified under § 5-204.11,
and not fewer than the number of handsinks required by LAW shall be provided.
(B) If APPROVED and capable of removing the types of soils encountered in the FOOD operations involved, automatic handwashing facilities may be
substituted for handsinks in a FOOD ESTABLISHMENT that has at least one handsink.

• Bar noted with 0ppm chlorine sanitizer. Until a minimum of 50ppm chlorine sanitizer can be maintained, kitchen machine will need to be
used.
A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at
exposure times specified under ¶ 4-703.11(C) shall be APPROVED as specified in §
7-204.11; shall be used in accordance with approved manufacturer’s label use instructions;
and shall be used as follows:
(A) A chlorine solution shall have a minimum temperature based on the concentration and
pH of the solution as listed in the following chart;

Violation 46 H: 4-501.116 Warewashing Equipment, Determining Chemical Sanitizer Concentration.
• There are no test strips for monitoring sanitizer concentration.
Concentration of the SANITIZING solution shall be accurately determined by using a test kit or
other device.
Violation 54 B: 6-202.11 Light Bulbs, Protective Shielding.
• Walk-in cooler missing bulb shield, provide shield or shatterproof bulb.
(A) Except as specified in ¶ (B), light bulbs shall be shielded, coated, or otherwise shatter-
resistant in areas where there is exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; or unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES.
(B) Shielded, coated, or otherwise shatter-resistant bulbs need not be used in areas used
only for storing FOOD in unopened PACKAGES, if:
(1) The integrity of the PACKAGES can not be affected by broken glass falling onto them;
and
(2) The PACKAGES are capable of being cleaned of debris from broken bulbs before the
PACKAGES are opened.
(C) An infrared or other heat lamp shall be protected against breakage by a shield surrounding
and extending beyond the bulb so that only the face of the bulb is exposed.
Low-temperature dish machine - 50ppm Ecolab solid-san chlorine sanitizer + handwash sink + food prep sink. Bar dish machine -0ppm chlorine
sanitizer + bar has three single-compartment sinks.

46H) Test strips now available for monitoring sanitizer concentration.
54B) Shatterproof bulb now available in walk-in cooler.
