The commissary for the catering/mobile unit for Trey's Mr. Dawg was inspected this day. Mobile unit was not on-site at the time of inspection. All equipment temperatures were found to be within the proper ranges. The mobile permit is only valid while the agreement with Mel's Cafe is used as the commissary.

Comments:
Inspection was conducted to assess commissary space for the above catering operation. Approval of this operation is contingent upon continued use of "Mel's Cafe" for commissary space. (1) Food will be purchased just prior to any catering jobs. There will be no long-term storage of food in the facility. (2) Food will be cooked the day of an event. No rapid cooling of prepared foods is required. Ingredients for cole slaw will be pre-chilled prior to assembly. (3) Insulated containers will be used for the transportation of catered foods. (4) Since prep space is limited, food for catering will be prepped when Mel's Cafe is closed.
