3030 - No towels at both handsinks. Provide at all times. Napkins were placed at each sink.
0850 - Critical No time tracked for chicken fries. Time must be tracked on foods which are on time control. These were discarded.
Comments:
Other observations: Exterior of walk-in found dirty. Single service lids not protected. Remember ham slices which are on time control during breakfast hours cannot be packaged and saved for another day. These are to be discarded just as you do tomatoes at the end of the day. H1N1 discussed.

Violation: 1770 C - Interior of "silver king" and undercounter freezer has build up on bottom and gaskets. Clean thoroughly.
Comments:
Time control in use for hot foods and cold items on line. Temperature logs being kept on cooking temperatures. Handwashing observed.

Comments:
Management is aware of symptoms to be aware of for workers. Ensure workers know the same information. Handout given to PIC. Good glove use and handwashing observed. Good time tracking on food that is on time control. Handsink near office has a leak. Repair. I suggest you remove hand sanitizer dispenser from drive thru and hand sanitizer shall be used only in addition to washing hands not in place of. Hand sanitizer to be located near handsinks only in kitchen area. It appears manager has good control on time/temperature.

Comments:
Visit due to customer complaint alleging that on 10/11/05 around 5:30 p.m. observed employee coming out of restroom and begin preparing food without washing hands and/or putting on gloves; another employee stated this was 2nd time someone has said something about gloves. Spoke with managers and with manager in charge that evening. Employee in question was not preparing any sandwiches or any other foods. All employees had gloves on while preparing sandwiches. Also have new hand washing policy that requires all employees wash their hands every hour.
