Observed a package of bologna in the kitchen cooler that was labeled 5/15/15. Per the kitchen manager, the bologna had been pulled from the freezer on 8/31/15. Discussed with staff the need to label food items on the day they are opened or prepared, then on the day that they are frozen, and again when they are pulled from the freezer to ensure that potentially hazardous food items are consumed or discarded within 7 days. The bologna was labeled at the time of this inspection.
Observed debris accumulation on the racks in the 2 door cooler near the serving line in the front of the kitchen. Wash, rinse, and sanitize and ensure routine cleaning.

In the walk in cooler there was cooked and cooled down jambalaya that was date labeled 9-16-14. Per employee it had been in the cooler for the entire time. It was voluntarily disposed of. In the walk in cooler there was also a container of cooked meatballs that were not date labeled. Per employee she had documented the date and temperature in temp charts. Discussed date labeling.
