    Measured a container of cut tomatoes in refrigeration unit at 46F. Maintain all cold potentially hazardous foods at 41F or below.
  • Warewashing facilities: installed, maintained, use (-1 point)
    Food facilities that prepare food shall be equipped with warewashing facilities. Testing equipment and materials shall be provided to measure the applicable sanitization method. (114067(f,g), 114099, 114099.3, 114099.5, 114101(a), 114101.1, 114101.2, 114103, 114107, 114125) A thermometer must be readily available to monitor the temperature of the water at the warewashing sink. A warewashing sink used to wash wiping cloths, wash produce, or thaw food must be cleaned and sanitized before and after each use.
    Observed missing chlorine test strips. Obtain chlorine test strings to ensure proper sanitation.

    Observed 2 buckets of chlorine sanitizer at a concentration greater than 200ppm. Ensure that chlorine sanitizer is at a concentration between 100ppm and 200ppm.

    Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food shall be used only once unless kept in clean water with sanitizer.     Observed 1 wiping towel left on prep table, 1 left on top of meat slicer, and 1 left on drain board of 2-compartment sink. Store all wiping towels in the designated area (i.e. sanitizer bucket) in between use.

    Observed a bag of bagels left directly on top of a package of raw meat in reach-in freezer. Store all foods in a manner that will prevent contamination (i.e. store raw foods at least a shelf below ready to eat foods).

    Observed an ""advertisement paper"" used as a divider for single use knives and forks. Discontinue this practice. Use approved utensils (i.e. bowls, napkins, etc).

    Observed a sheet of scratch paper with writing on it being used as an utensil holder. Discontinue this practice. Use approved utensils (i.e. bowls, napkins, etc).

    Observed ice scoop left on top of ice cooler lid. Store ice scoop in a manner that will prevent contamination (i.e. in a clean container).
