Chicken recorded at 120 degrees F. Management ordered to increase temperature of hot food holders(2). Food was not held at 135 degrees F or above as required.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Food was held at 66(eggs), 56(milk), 62(chicken & pork) degrees F. rather than 41 degrees F or below as required in the defective refrigeration units. Management was ordered to remove all potentially hazardous items from the defective units(front reach-in, residential refrigerator/freezer, and reach-in refrigerator located in kitchen) and place them inside refrigeration units maintaining 41 degrees F. Management was also told not to store foods inside these units until repaired or replaced with units maintaining 41 degrees.
