    Food shall only contact surfaces of equipment and utensils that are cleaned as specified in § § 46.711—46.719 (relating to cleaning of equipment and utensils) and sanitized as specified in § 46.731 (relating to sanitization: requirement, frequency and methods). -Utensil for stirring hot beverages was observed in stagnant, mirky water.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    Cold foods are being held above acceptable cold-holding temperatures. Cold foods must be held at 41 degrees F or below. See temperature log (pg.2). -Ham snd salami sandwiches observed inside unrefrigerated baked goods display case. * Note: 16 ham and salami sandwiches were discarded at time of inspection.

    Opened commercially processed ready to eat food (deli meats and cheeses), located in cold-hold unit, and held more than 48 hours, was not marked with the date it was opened.

    Food service person did not properly explain sanitization procedures at time of inspection. Sanitarian explain proper procedure.
  • Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
    The handwash sink in the utesils washing area was blocked by electrical cord and storage rack and not accesible at all times for employee use.
