*3.4 Sausage patties on a tray were cold holding at 63°F. Cheese slices on the serving cart were cold holding at 60°F. Hold potentially hazardous foods at 41°F and below to prevent the growth of organisms.
4.2 A quaternary ammonium chloride sanitizer test kit was not available to measure the sanitizer concentration. (Note: a Chlorine sanitizer test paper kit was available.) Obtain the proper sanitizer test paper kit in order to measure the sanitizer concentration.
Note: As discussed potentially hazardous foods shall be cooked to temperature and held hot at 135°F and above.
Note: As noted on the Standard Inspection Report of 6-18-2010: Potentially hazardous foods shall be reheated to 165°F and above within 2 hours.
