- 3.4 Lunch meats were lacking date marking, sandwiches were dated 1/8/12, and a roaster of food in the walk-in cooler was lacking a date mark. Ready-to-eat foods shall be date marked when opened and consumed within 7 days.
- *3.2 Observed the raw meat was stored next to pepperoni and above other ready-to-eat foods. Different types of raw animal foods shall be stored separate from other raw or ready-to-eat foods to prevent cross-contamination.
- *7.1 Observed that disinfectant spray was stored next to the sandwich bags. Toxic chemicals shall be stored in a separate designated area from equipment.
