  • C/*4.4 The dish machine is not reaching 180°F during the final rinse cycle. Maintain final rinse temperature at 180°F and above in order to effectively sanitize food contact surfaces. Maintenance man adjusted booster heater temperature today. Following the adjustment the machine was properly sanitizing.
  • *5.1 Repair the preparation sink plumbing. Provide an air gap between the end of the pipe and floor drain, to prevent possible contamination of food items or the water supply.
  • 6.4 Repair the chipping hood, to provide a cleanable surface.
  • 6.2 Provide 20 foot-candles of lighting in the equipment/food storage area. Currently 15 foot-candles.
  • 4.2 Provide a test kit that corresponds with the sanitizer. Current test kit reads 100-400ppm, and the sanitizer must be maintained at 150-400ppm.
  • 4.5 Clean the hood vent and surrounding piping which are soiled/dusty.

  • NOTE: 2 compartment sink, with detergent dispenser, is being used to scrub pots and pans before running through the dish machine. Discussed using a detergent sanitizer if they wish to use the 2 compartment sink without using the dishmachine.
