I overlooked that the OP was coming from the Charlotte area. Hot springs and Cherokee might be a stretch for a day trip but Brevard is closer even than Asheville.

Since people might read this thread who are based in Asheville, I've thought of another day trip for history buffs. Take I-26 N (beautiful drive) and exit at Erwin TN, then 107/81 to Jonesboro TN where you find the Chester Inn museum (limited hours). The visitor center can direct you to other historical displays - actually the whole town is like a museum. Then follow 11E to the Davy Crockett Birthplace and the Andrew Johnson museum.

If you don't mind curves return from Greeneville via hwy 70 where you will pass within a few miles of Hot Springs. Or you can follow 107 back to Irwin and return via the interstate.

Yes you certainly did. Roan Mountain, Rocky Fork, Rock creek park, and if your car can handle a gravel road - Beauty Spot.

The last 3 would be a good day's excursion, save another day for Roan Mountain and maybe Watauga Lake. Roan mtn and Watauga can be reached from Boone. Hike a bit on the Appalachian trail.
