People have said to "shop around" from one loan officer to the next to see if one can help me secure a loan vs. the other but wont all this checking my credit ruin lower my fico credit score substantially?

Just go to a reputable bank. You can shop around for rates, without having your credit check, but you can't get a rate locked in, until you go through the whole process.
