Seeing you like the consistently sunny, warm and dry weather, the NC may not be for you as there's been in recent years an increase in flooding rains. It's not exactly that sunny either during summers - autumns. I've spent quite a lot of time up there, one time during December/January over the course of two weeks, all it did was rain and rain for days on end, didn't get much sun either come to think of it. Another time in February, the temperatures dropped below 10oC over the course of a week with fog and mist. This can occur in any month but to an lesser extent during Spring which is usually regarded as the best season in terms of good weather over the NC region.
Actually, I like having a bit of rain, as long as the duration doesn't last very long.
What makes NC's climate nice is that it's nearly as sunny as Florida and plenty of days with calm winds, most days at least a few hours of the day will feel good, but since they can still get almost as much freaky-cold as we get in Canada (though is much shorter lived) buildings and homes are reasonably-well insulated and heated. That being said, I much prefer the climate from southeastern NC to central SC and southwards; where the spanish-moss grows.
Hurricanes aside, August is a grand month in the Carolinas, imho.
*In winter time, I have a wide range of temperatures going from what I find "acceptable" to "perfect"... except when I deliberately travel to the "tropics" for warmth. I go to get consistantly warmer weather in winter than Canada has in summer. It's a "summer substitute" for me; hence Bahamas is often "too cool" and too "spring-like."
I don't like hot weather especially when the humidity is oppressive. I prefer cool weather, and I keep asking myself why the heck I stay here in Florida. Well, actually I know the answer but that's a different debate.

Coastal, Hawaii doesn't have a major variance in temps, they say about 10 degrees. Summer for Honolulu might bring low 80s, but January 70s. Things change on the various islands if you go inland to higher elevations, of course, chilly and even snow at times.
I've never noticed humidity when I've been there. I've visited mostly in Spring and Fall.
