I don't think any of the non-historic core ones are really canyons. Wilshire's buildings are too sparse to make it an urban canyon. Besides I also think you missed the best canyon in the city, which is Broadway, looking from, I'd say 5th south.

this place today. Guess it's the closest thing we have to a highrise canyon in this city. Streetview is a bit outdated.

I have always thought of this street as an urban canyon:
