I am thinking of driving from NJ to Disney, and on the way back, possibly stop by a few places. The first thing that came to mind is DC. Aside from that, I have no clue. Any suggestion would be greatly appreciated.

Btw, we plan to go around December to January time frame.

Since I am from FL, I can only suggest some in FL:
St Augustine - historically rich.
Kennedy Space Center.
Daytona Beach.

Of course the weather that time of year as you head north may be a factor in where you stop

There are thousands. Every town with coastal water access has something from the Colonial
era to brag about. If you're willing to go up to 100 miles inland then wide spot in the road has
something from the Civil war era to show you. Some are actually interesting to see.

You mentioned DC which by itself could take 3 months to really see.
How much time will you have to explore?

If you weren't going at that time of year I'd suggest the Outer Banks and Kitty Hawk. Try Charleston. Weather may be miserable but at least you'll eat well.

Good question, I don't have many vacation days so I plan the trip to be 8 days max. 2 days for driving to/from, 3 days at Disney, so I might have 2-3 days for one or two spots. Obviously, I am going for a cursory look into most places with my 6 year old daughter....
