Moving just like the title says.. from WA to NC. I'm near Tacoma right now, and we're going to Charlotte, NC. I'd like to go down to California and then cut across to avoid northern states due to the weather. We're driving a 16' foot truck towing a car.. and it's the first time driving anything other than a small car, so avoiding the snow would be awesome. Also- his parents are in Kentucky, so if you guys could give a interstates to use from Wa to Ca passing through kentucky.. then to Charlotte that would be AWESOME.

That's counter productive, as getting to KY is going to require you to drive routes where you are likely to hit snow.

The best way (not guaranteed) to avoid snow is down I-5 and across I-10, picking up I-20 then north on I-85 to Charlotte.

Do this ^^^^ just try to 'get-there' (NC) There will be a fixed mileage and time that the rental truck company allows, and you will be pushing the limits to stay in warmer route. Extra charges and fuel will be spendy. You can fly RT NC>KY for <$100. Enjoy the trip and best luck on the weather and driving.

Annerk is right. To have the best chances to avoid bad roads, that's going to be your best bet. But, you're not totally out of the woods as you still have some high mountains to cross and just about anywhere from Willcox, AZ to Charlotte is subject to snow or ice the later you get into the winter.
