Where would you move? Young couple ready to start family. Teacher/nanny and personal trainer. All advice appreciated. Looking to get out of the hustle and bustle of Greenville but still have conveniences. Want to live in a beautiful walkable/bike town.

To me you are comparing 3 totally different areas.

Beaufort is an actual city with a beautiful historic downtown area on the river.
Hilton Head is a cluster of private housing developments, called plantations. There is no real city, but a lot of shopping and restaurants areas off of the main road. Bluffton does have a small historic area, but to me Bluffton is all the car dealers and national chains (restaurants and stores) lined up on 278 heading onto HHI. You will find the "hustle and bustle" you are trying to escape on HHI and Bluffton, traffic can be crazy especially during the high tourist seasons.

I would pick Beaufort, I love the town, the history, location, and it's sense of community.

^ Great comparison.

I'd go with HHI. It personally speaks to me....lots of trees, sign ordinances, bike paths everywhere, great restaurants, etc.

Visit all three and see what you think, though, as stated above, Bluffton pales in comparison to HHI and Beaufort.
