Is a substance like an apple be considered to be both a solid and liquid or is it considered to be only a solid until something is done with it like squeezing it into applesauce or apple cider?

Ice is solid until it melts into water, a liquid, which becomes steam, form of gase when heated. Matter can go through different states under different conditions.
