In HEB's meat case they have some aged to 14 days.
This was at the Potranco HEB. There is probably a better selection at Central Market.

True dry aging takes twice that long. Aged beef isn't necessarily dry aged. If people saw the moldy carcass of beef that results from the dry aging process, they might think otherwise, but it can be delicious. When my dad was in the supermarket business decades ago, and stores actually employed butchers...he would order up a side of beef to age and sell it to customers willing to pay the premium. I'm disappointed with HEB beef in general as it is typically USDA Select. Choice is much better grade, but hard to come by at HEB. And Prime is the best, but even harder to find and pricey.

It depends on the HEB, ours has almost no select, mostly choice and prime.

The HEB Plus at Bandera is like that. I love getting up there as they have a pretty good selection of prime.

Someone mentioned HEB and 14 day dry aged....AFAIK HEB does not do a dry age? So this is new to me, can anyone elaborate?

HEB wet ages their steaks. It keeps more moisture in the meat so they can charge more by the pound. Don't know of any place in town where to buy dry aged steaks but online.

Not exactly sure how long its aged and if its dry aged but look up coopers meat market on broadway

Dry aged steaks are far from beef jerky.

I have had many dry aged steaks in Chicago and they are fantastic.
