4 or 5 large sweet potatoes

1 1/2 lb dark brown sugar

1/2 cup molasses

6 cups hot water

Wash potatoes and bake @ 400F for about 45 min. Remove from oven and let cool. When cool peel and slice 1/2" thick (vertical or horizontal doesn't make a difference). Place in a single layer in a baking dish. Mix 1 lb brown sugar and molasses in 4 C water and pour over potatoes. Bake at 350F until water & sugar mixture is about half gone (about 60 min). Mix remainder of brown sugar in 2 C water and pour on potatoes. Bake another 60 min. Remove and cool, refrigerate overnite or longer. Reheat to serve, warn guests that potatoes are now a lot like sweet potato caramel and will suck the teeth out of their mouth.

My kids and I love these. I'm not sure if they are a vegetable or a desert.

Definitely a dessert, with that much sugar, but glad you and your kids found something you enjoy so much!
