I made this recipe up and it came out pretty good.

1 14oz can Hunts diced tomatoes with green pepper, onions, and celery
1 14oz can chicken broth
1 1 pkg frozen Green Giant Immunity Boost "Broccoli Florets, Julienne Carrots and Red and Yellow Sweet Pepper Strips In A Garlic-Herb Infused Extra Virgin Olive Oil Seasoning."
2 or 3 tilapia filets (any white fish will do)
Old Bay Seasoning

Combine into medium sauce pan Tomatoes and chicken broth
Microwave frozen vegetables 4 min and add to sauce pan
Microwave fish filets covered with plastic wrap 2 min-
Break into small pieces, add to sauce pan
Old Bay Seasoning to taste
Bring to boil, simmer 5 min

Goes well with multi grain bread and butter

nice.. sounds similar to a local catfish stew recipe that you can find in SC.
