This comes in a bag and it's in the boutique chilled cheese section. I'm only interested in sauerkraut for the supposed health benefits which as I've read are not contained in commercial kraut.
My supermarket has it in the refrigerated section. You need to check the label & see if it has probiotics listed. My favorite way to get probiotics is kefir. You will find that in the dairy section, it comes in a variety of fruit flavors.
I have no clue where to buy it and don't want to make my own.
Bubbies Sauerkraut is authentic. Naturally made via fermentation, no vinegar and really good. There's a local organic market that carries it. https://bubbies.com/faq
Costco also carries Wildbrine Raw Organic and it's pretty good. Organic cabbage, sea salt and garlic.
We make our own. It is simple as all get out. I think we have 10 quarts in the cellar, maybe more.

Thanks, there's a store two miles away that has it.
I've found the Costco variety to be mild. Not as mild as some of my home made (I make one batch with less fermentation time).
It's really simple to make. Mix distilled water with the correct ratio of kosher salt, shred cabbage, add whatever spices you want, weight it with a plate, cover with a towel and sit it in a cool area covered with a towel Every few days remove any harmless kahm yeast that floats to the top.
And just wait Put in a mason jar with lid and store it. No further canning needed. We've got 12 quarts of the stuff in our basement closet storage.
It's a fine art to make fake lactobacillus plantarum when you're fermenting foods, lol.
