What is a good chinese style stir fry sauce combination with either hoisin, or oyster sauce?

I like hoisin sauce thinned with a little bit of rice wine vinegar and soy sauce. The addition of fresh minced garlic is always good. If I want it hot and spicy, I mix in a spoonful of red chile paste.

Can I substitute rice wine vinegar with any vinegar? I only have apple cider vinegar on hand.
