Coffee Liqueur
2 C sugar
1/4 C instant coffee
1 C water (for dissolving the instant coffee)
3 cups vodka
1 vanilla bean split lengthwise, scraped
Dissolve the instant coffee in the heated cup of water. Dissolve the sugar in same and add the vanilla bean and contents, then add vodka. Store in a bottle in a dark place for 4 weeks, shaking the mixture daily. After 4 weeks, strain the liquid and remove the remnants of the vanilla bean skin. This can be very habit-forming.

2 C strong coffee
1 1/2 C sugar
2 C vodka
1/2 vanilla bean split lengthwise
Make a fresh brew of very strong coffee. Add the sugar. After cooling, add the vanilla bean and vodka. Transfer to a bottle. After 4 weeks strain, remove the vanilla bean and transfer to a new bottle.

6 C sugar
4 C water
3/4 C instant coffee
3/4 gallon vodka
2 vanilla beans, halved lengthwise
Mix sugar, water, vanilla beans, coffee together and bring to slow boil. Turn heat down and simmer 1 hour. Remove heat, cover liquid with plastic wrap. Let sit for 12 hours, then remove wrap (it will pick up film from the top). Add vodka, stir well. Bottle in dark bottles. You can leave the vanilla beans in or strain the mixture and remove them - your choice.

Prime price too - now I stock up on my trips to Europe - I guess they are more traditional with their vanilla, because even little mom-n-pop stores in Eastern Europe have real vanilla beans for sale.
