Hi all,

My friend and I are planning a wintertime picnic for this weekend, and I need salad ideas! I'm not terribly picky regarding savory vs sweet, or hot vs cold. My only restriction is that meat can't be incorporated (I'm a Vegetarian).

I have been kicking around some ideas involving either baby spinach or arugula, bleu cheese, cranberries, and almonds. Any other ideas?

Swiss chard salads. Make many varieties during the winter months both hot and cold.

Family also loves various cabbage salads as well.

Lots of recipes on the net.

I love Napa Cabbage Salad and also Mostaccoili Salad.

NAPA CABBAGE SALAD
1 head Napa cabbage - chopped fine
1 bunch green onions - chopped
5 tabelspoons margarine
2 packges Raman Noodles (DO NOT use Season Packets) - break up dry noodles
2 oz sliced almonds
3 Tablespoons Sesame Seeds
1/4 cup white vinegar
3/4 cup canola oil
2 Tablespoons soy sauce
1/2 cup sugar

Melt margarine and brown dry raman noodles with almonds and sesame seeds. Cool! Add to cabbage and onions. Combine remaining ingredients and boil for 1 minute. Cool completely. Toss dressing with cabbage and noodle mixture about 15 minutes before serving - be sure to shake dressing.


MOSTACCIOLI SALAD

1 1/2 cups apple cider vinegar
1 1/2 cups sugar
2 Tablespoons yellow mustard
2 Tablespoons dried parsley flakes
1 teaspoon salt
1 teaspoon garlic powder
1/2 chopped cumcumber
1 small chopped onion
1/2 cup chopped celery
1 small can pimentos (can be omitted)
1 box Mostaccoili noodles - cooked

Cook and cool the noodles. Add the chopped onion, cucumber, celery and pimento to the noodles. Mix the vinegar, sugar, mustard, parsley flakes, salt and garlic powder and use as the dressing over the noodle mixture.
Makes a lot...I sometimes half the recipe.

Tazzled: the raman does add texture and just makes the salad more interesting and more tasty with the "browning" it gets from the margarine. Happy Eating.

Note...the mostaccoili salad is a sweet salad and you don't have to worry so much about spoilage since it doesn't have any mayo
