1 onion chopped
2 cloves garlic chopped
1 cup of shredded reduced fat cheese any kind you like (I used cheddar) can use more if you like it extra cheesy and you can use full fat cheese too.
1 cup of lowfat milk
3 large eggs
1/2 cup bisquick heart smart
1 tsp Italian seasoning
1/2 tsp kosher salt
10 oz bag of frozen broccoli, cauliflower, carrot mix
1 tbsp olive oil
Cook frozen vegetables until almost soft but not mushy. I do this in the microwave in a glass bowl for 7 minutes. Saute onion and garlic with olive oil until onions are soft. Add this to the drained vegetables. add 1/2 cup of the cheese and mix well. Place in a greased pie pan or square glass pan. In another bowl combine, milk, eggs, bisquick, salt, Italian seasoning and the remainder 1/2 cup of cheese. Mix well and pour over the vegetables. Cook in a pre-heated 400 degree oven for 40 minutes.
I made this today for lunch and it was great. You can do this with zucchini, asparagus or any vegetable.
