I never could make a small pot of soup, and would freeze some, only to feel guilty later when I wanted some fresh.

What I do now is buy the Bear Creek soup mixes (they are SO good) and just make however much I need. Add cooked carrots, onion, broccoli or cauliflower, left over chicken or ham and make it your own. Good Stuff!

Throwing a ham in the oven NYE. I don't know if it's officially "soup", but a big ol' pot of ham and (pinto) beans, with cornbread, a couple of days after that.
Then a pot of split pea soup (husband's favorite).

On Sunday, I'll be making my traditional New Year's Andouille, kale, and black eyed pea soup and serve it with corn bread.

Gotta get my good luck and money in 2017!!

My soup is usually of the unglamorous "clean out the fridge of left-overs" sort. This week it was the left over turkey & a bag of frozen soup veggie mix, a can of tomatoes & an onion.
