not so sure about Holly Springs and Apex, but there are a lot in the Cary and Wake Forest area...
in Wake Forest the one that comes to mind is Heritage and parts of Wakefield ( which is technically Raleigh, but more Wake Forest).
In Cary, there are several, but the ones I have looked at are Highland Oaks and... and oh...the name escapes me, but its one of the adjoining Neighborhoods...maybe someone will come and refresh my memory
There are a lot of nice neighborhoods in all of the areas you mentioned in that price range...
In Apex, Abbinton and Haddon Hall come to mind Most homes are right in that pricerange. Both have areas that are more established and several years old; as well as brand new areas. Haddon Hall has easier access to Highway 55 and is more centrally located in Apex, therefore more convienient to Cary and Raleigh. Abbington is right of HIghway 64.
In Wake Forest, you may want to check out St. Andrews Plantation and Stonegate. St. Andrews is an established neighborhood, nice homes, and larger lots than you find in most newer construction. Stonegate is new construction with a wide variety of homes and prices. I believe the prices start in the mid 200s up to about 450K. It has nice amenities such as pool, clubhouse, and tennis courts.
I second Crenshaw Hall Plantation. I have a good friend who lives there and loves it. It seems to be a pretty close knit neighborhood with lots of activities.
I second Haddon hall in Apex. I'm renting a town home there and absolutely adore the area. It's already been decided when we buy we will be staying right here.
In wake forest, new construction with community pool:
Heritage (although you have to pay for membership to the pool)
Bowling Greene
Reynolds Mill
Dansforth
Austin Creek
Not new construction and a community pool:
Thornrose
Wakefield
Crenshaw hall
There are also resales in the above "new construction" neighborhoods. The issue that is going to limit your search, at least in wake forest, is the pool thing. If you want more land, then you are going to get neighborhoods without community pools (for the most part).
