I don't know any particular builders to recommend but one recommendation might be to get your own attorney and not use the builders if you want independent advice, etc. A builders contract will be one sided in favor of the builder so review it carefully and make sure you understand it before you sign anything.
I've posted here before about lien issues (when a builder fails to pay subcontractors) - one thing that can be done is a judgment search on the builder to see whatg has been filed.
