There's plenty of good quotes from founding fathers regarding religion which be thought of whenever someone tries to claim that America is a country based on Christianity and its laws should reflect that:

“The Government of the United States of America is not in any sense founded on the Christian religion.”
-1797 Treaty of Tripoli signed by Founding Father John Adams

“Christianity neither is, nor ever was a part of the common law.”
- Thomas Jefferson

Also, the Mississippi Declaration of Secession has some gems to think about whenever someone claims that the Civil war was not fought over slavery:
