I doubt I would buy any except to find out the taste and texture. After all we eat mushrooms (fungus), Tofu (coagulated soy protein) along with cheese (processed milk solids sometimes with fungus), lobster (really big bugs) and God knows what all in existing processed and “natural” foods. Vat grown protein has been a staple idea in science fiction colonial stories for decades. What do you think the Star Trek replicators were serving?
I've thought about this for years. It would mean the end of so much suffering for animals without converting everyone to vegetarian food. It would mean the end of not only factory farming, but eventually all farming geared to meat production. There would be no more fear of running out of water in the West. The environment could recover, as it takes several poundsa of forage or grain to produce one pound of meat. The meat would taste better.
There's been a fairly major breakthrough in TVP (textured vegetable protein) lately, also.... though they are still trying to perfect the particulars of the process before it goes into production. The new process is designed to bring a "real meat" texture to TVP that it never had before, making it more palatable, as texture often plays an integral part in whether people like a certain food.
This will give people their "perfect" pork chop and steak.
