Tonight's dinner...(How a bachelor cooks for himself) Grilled wild sockeye salmon sprinkled with dill weed and tarragon, vegie mix of fresh sweet bell pepper, broccoli and sweet white onion in a tangy chili/ coconut sauce, and the old standby mashed potatoes with a touch of garlic and fresh ground black pepper.
Dang, Sanspeur. I don't know any bachelor that cooks that well for himself! Great meal that sounds really tasty. Nice pic too, though it seeems a little dark on my monitor.

So here are my contributions, in no particular order. They're not terribly artistic, but the subject matter is delicious.
This was one day's harvest off my spouse's ten tomato plants last summer. We hauled in tubs like this for weeks, and it took us until just last month to finish off the last of the tomatoes we froze up for soups and stews.
We found a recipe for a chicken-bacon-mushroom pot pie that has become one of our favorite cool-weather comfort foods. Best of all, it's scaled for just two servings, and it goes together in under an hour, including cooking time. Wonderful stuff!
And a few years back, we got brave enough to try a traditional crown roast of pork for Christmas dinner. It was a huge hit, and we've done it several times since then, but that first one was the prettiest of all of them.
And finally, if there is one thing in the kitchen at which I have some modest skills, it is in creating pies. I still think that the apple pie I made for my then-boyfriend's parents for Thanksgiving back in 1976 was what convinced them that I was good enough to marry their eldest son.

Here's what we did. Roast those tomatoes on a grill with jalapeno, garlic cloves. Then, peel the skin off the tomatoes and throw everything in a blender. Once blended, add chopped onions, place in bowl and serve with chips!
