Oh! I tried a single-row portrait orientation pano of a similar scene the other day using a wide angle lens that totally messed up the stitching. Here I was thinking I'd probably need a longer focal length and go multi-row, which of course would be a huge production. But the fisheye looks to be a simple solution. Darn, the wife is gonna kill me.
Yes, I've seen some gorgeous nightscape panos, but have never tried one. I think the trick is to keep the exposure time down to make sure there's no trailing/rotation especially at the edges of each frame. But yes, I can see how it can be tricky. Have you tried stitching with DeepSkyStacker (stacking in Mosaic mode)?
The second shot up there was at 35mm (10-sec), so I could see building a pano with many frames of those, but it would be, as you point out, a massive effort.
A really wide-angle lens obviously helps, especially if you're too lazy (like me!) to spend time perfecting a stitched pano. I find the fisheye to be great for nightscapes. I shot this just before from exactly the same spot at 16mm, but it does not capture the same field of view and just does not have the same..."oomph":
