That's a great idea! I learned by accident that if you let regular yellow onions sprout, the green part can be used just like scallions, and the flavor is even fresher and even more spicy than the kind you buy in the grocery store.
Now that's a great idea, too!

Interesting, I usually eat the root ends and throw away the green tops. That must be why I burp when I eat them, they're growing in my stomach...
I thought you were supposed to eat the root part as well and throw away the green. OK I'm blonde, but I just can't eat raw onions without getting really sick. I usually cook with them almost every day.
