I like to use Mexican Vanilla -- a little more intense, and also add 1/4 tsp of cinnamon!

All great tips and good idea to keep reminding about butter being better.
Thing is, I don't bake, haven't baked for years. Now I want fresh baked cookies. I think I'll bake some CHOCOLATE CHIP COOKIES!

Another hint: if you haven't ever baked your cookies on stoneware... it's the only way to go! perfectly crisp edges and soft in the middle!
